Dark chocolate in perfumery is built from cocoa absolute (extracted from roasted cacao beans) plus vanilla, patchouli, and synthetic furaneol. It smells of dry cocoa powder, roasted nuts, and a bitter, slightly smoky richness — distinctly 'dark' rather than milk chocolate. Cocoa absolute is the structural backbone of Thierry Mugler Angel (with patchouli and ethyl maltol), the entire 'praline-gourmand' genre, and modern chocolate-amber compositions like Paco Rabanne Black XS.
