Vanilla
Vanilla in perfumery comes from two sources: natural vanilla planifolia extract (expensive, complex, slightly smoky) and synthetic vanillin (cheap, sweet, and the dominant note in most 'vanilla' fragrances). Vanilla is the note that made the gourmand family possible — without it, Thierry Mugler Angel doesn't exist. It's also the most universally liked note in consumer testing, which is why it appears in roughly a third of all feminine fragrances launched since 2000.
