Coffee
Coffee in perfumery is usually coffee absolute (solvent-extracted from roasted beans) or a synthetic accord of furfuryl thiol, pyrazines, and guaiacol. It smells of roasted coffee, smoke, and a slight caramel sweetness — drier and more bitter than chocolate. Coffee pairs more naturally with 'adult' notes than other gourmands: it's the heart of Maison Margiela Coffee Break, Akkè Kappà Yodhè, and Jo Malone Oat & Cornflower (adjacent), and it's a common pairing with tobacco, leather, and whisky accords.
