Cinnamon in perfumery comes from the bark of the Cinnamomum tree, steam-distilled as an essential oil or extracted as an absolute. It's warm, sweet, and baking-spice hot — the most edible of the spices and a fixture of cold-weather gourmands. Cinnamon is a dose-sensitive note: at low levels it's cozy, at high levels it's suffocating. It pairs almost exclusively with vanilla, amber, and apple.
